jelly cake

lamington-style cake, being a plain cake cooked in a gem iron (rounded bottoms) dipped in pink almost-set jelly, split in half, re-joined with fresh cream, covered with dessicated coconut: Please Nana, make me some jelly cakes! Compare pink lamington.

Contributor's comments: I am from Sydney and we always called them pink lammos (lamingtons) my husband is from Southern Victoria and his Mum makes great Jelly Cakes!

Contributor's comments: This term was also used in the Midwest of WA.

Contributor's comments: Commonly used in South Australia.

Contributor's comments: Jelly cakes were common where I grew up in South Australia (southern vales area). Often made with cubes of plain cake cut from a big block cake. Occasionally filled with cream but mostly not. Always used pink jelly - somehow, attempts with other kinds of jelly just didn't seem right!
